The evening began with a wine reception and welcome remarks by Rick Turner, General Manager of Pappas Bros. Steakhouse. Emphasizing the importance of CCI, Rick said, “We do not take lightly how important you (the Corporate Concierge) are to our success. We are honored to host each of you tonight and showcase our restaurant. We value our relationship with the CCI and all of us at Pappas look forward to working with each of you in 2009.”
The evening followed with a four-course menu prepared by Executive Chef, James Johnson. The first course featured jumbo lump crab cake with celery root slaw, and the second course featured steakhouse salad with field greens, sliced apples and oranges with Roquefort cheese and candied almonds. Butter poached strip loin with rosemary demi and potato puree and petit carrots followed. The finale was chocolate midnight cake!
