One of the highlights of the annual National Concierge Association Conference is the Dine Around event. At this year’s NCA Conference, held in Dallas Concierges members from cities across the US spent the evening at some of the area’s finest restaurants. Andrea Spence, Corporate Concierge with the Concierge Connection was the table captain for the evening at Bolla in the Stoneleigh Hotel.
The dinner at Bolla, named for the executive chef, David Bull, was exquisite and the participants were beyond impressed with the entire experience. It was wonderful and we’ll have fond memories of it for a long time. We knew it was going to be a special evening when we were greeted at the street by Delane McCoy, Bolla’s General Manager, and Anthony Pitman, Concierge for The Stoneleigh.
They ushered us through a tour of the lobby and then seated us at the Chef’s table. It was breathtaking! Bolla is closed on Monday’s but was opened especially for the NCA Dine Around Concierge, so we had the entire space and staff to ourselves. We were treated to a four course journey paired with wines selected by Mr. McCoy. The culmination of ingredients and flavors were surprising and delectable. Words like “unexpected, smokey, sexy, buttery, tender, perfection, and amazing” were used to describe the dishes. Our courses included Roasted Beet Salad, Seared Scallops, Braised Spare Ribs, and 5-layered Chocolate Cake.
The architectural and cultural history of The Stoneleigh as well as the addition of Anthony to our party was really what set our experience apart from all the others. He is a wonderful story teller and certainly knows the hotel’s history. I just wish we would have had a little more time to relish the food and the building in it’s entirety. We also took a great 10 min tour of the penthouse which has a reputation for housing celebrities, current and posthumous.

I remember all the guests loving their experience at Bolla and not wanting to leave. I had to pry them out of Bolla, they enjoyed it all!
